So what is the difference between Tequila, Mezcal and Sotol? When the agave plant is distilled it produces Mezcal. When this is done by an authorised distillery from the Tequila region of Mexico, it is called Tequila. Sotol on the other hand is produced from the sotol plant and has its own unique taste (more coconut and less spice).

There are three main ages of tequila: Blanco, Reposado (1 to 11 months of barrel ageing) and Aņejo (over 1 year). These offer a huge diversity of flavours and characteristics.
